It’s zero waste week, and so we thought we’d sharing a favourite recipe of ours for using up leftover bread. It’s a delicious and super easy sweet snack, perfect for making with kids and a sure fire hit with the whole family. Ours didn’t stay on the plate for long!
Difficult to describe (and name) we think it is like a cross between French toast and bread and butter pudding, so we call them B&B bites. And of course we added a lavender twist! We reckon they take about five minutes to prep and maybe 20 minutes to cook, depending how many you make…
Ingredients
Leftover bread (we used four surplus hot dog rolls we had spare after a barbecue)
250ml milk
2 eggs
150g Sugar (or to taste)
A few sprigs of lavender, fresh or dried, or a teaspoon of dried culinary lavender
A splash of Gower Lavender Syrup
Oil for frying
Method
- Dice the bread into 1inch/ 2cm cubes and set on one side
- Beat the eggs and set on one side
- Pour the milk into a bowl (you can use a non-dairy substitute if preferred – we used coconut milk)
- For the sugar – add your lavender into your sugar and set on one side in a wide dish
- Heat the oil in a frying pan over a medium heat for a few minutes
- Working quickly, take chunks of bread and dip them first into the milk and then into the egg, and then place straight into the pan. You can cook a few at a time, keeping a production line going!
- Fry for a few minutes, turning regularly, until the bites are crispy and golden
- Lift carefully out of the pan and put straight into the sugar. Use a spoon to turn them and get them coated in sugar.
- Lift into a serving dish and cover. Keep going until all the bread has been dipped, fried and sugar-coated
- To serve, drizzle a little lavender syrup over the top. Best eaten fresh and warm! Yum!!
