Lavender goes beautifully in cakes, but you might not expect it to blend with banana. Rest assured it’s a delicious combination, as the latest in our series of lavender recipes demonstrates.
The recipe makes 6 cupcakes.
Ingredients
For the cakes
100g unsalted butter at room temperature, cut into pieces
2 bananas, mashed
75g caster sugar
2 eggs
150g plain flour
2 tsp baking powder
2 tbsp Lavender syrup
2 tsp culinary lavender
For the buttercream icing
300g icing sugar
150g unsalted butter
2 tbsp lavender syrup
A couple of drops of purple food dye
Method
1. Combine all the cake ingredients in a food mixer. Mix thoroughly, then pour into a jug.
2. Put 6 cupcake cases into a cupcake tray and divide the cake mix between them.
3. Bake in your oven at 180C/170C fan/gas mark 5 for about 20 minutes or until a skewer pushed into the cakes comes out with no cake mix attached.
4. Cool on a wire rack.
5. Mix the icing ingredients together in a food mixer.
6. Pipe the icing onto the cakes, and enjoy!
