Eggnog is an age-old Christmas tradition, and it works beautifully with the addition of our new Lavender Syrup. Here’s the latest in our lavender recipes series – a recipe guaranteed to make your Christmas merry.
Ingredients
Makes 2 large glasses
80g caster sugar (50g to be mixed with the egg yolks, 40 to be mixed with the whites)
200ml milk
250ml double cream
150ml bourbon or rum (or a mix of both)
3 eggs, separated
1 tbsp Gower Lavender Syrup
A sprinkle of grated nutmeg
Method
1. Whisk 50g of sugar into the egg yolks until smooth.
2. Stir in the milk, cream, alcohol and lavender syrup.
3. Whisk the egg whites until opaque and frothy, then whisk in the sugar and keep whisking until the whites form stiff peaks. Be warned that you must make sure your egg whites and whisking bowl are free from washing up liquid, oil and grease, and any trace of egg yolk, or your whites won’t behave.
4. Fold the egg whites into the yolk mixture.
5. Pour into two glasses and serve sprinkled with nutmeg.
