Try baking a real showstopper with the latest in our lavender recipes series. This recipe really is something special – a bread and butter pudding with a twist, which uses our very own lavender syrup!
Ingredients
60g unsalted butter and a little extra for greasing the dish
8 thick slices of white bread
80g caster sugar plus a couple of extra tablespoons for sprinkling
450ml milk
1 tsp culinary grade lavender or lavender from your garden
1 tsp vanilla essence
1tsp lavender syrup
75ml double cream
3 large eggs
1 orange
Method
1. Pre-heat oven to 160C/Gas mark 4.
2. Butter the bread and cut it into triangles.
3. Mix the lavender with the sugar.
4. Arrange the buttered bread in layers in a large greased baking dish, sprinkling each layer with the sugar and lavender mix.
5. Cut 6 thin slices from the orange then zest and juice the remaining orange.
6. Add the zest and juice to a jug with the milk, cream, vanilla essence, lavender syrup and beaten eggs. Mix thoroughly.
7. Pour the mixture over the bread and arrange the 6 slices of orange on the top. Sprinkle with a little more sugar and leave to sit for 30 minutes.
8. Place in the oven for 30-40 minutes until nicely browned, sprinkle with a little more sugar and serve with cream.
