Have you ever tried lavender in chocolate? If so you’ll know that the two flavours make a great combination together – the slightly herbal and spicy notes of the lavender bringing out the sweetness of the chocolate. So if you fancy trying a new way to get your chocolate fix this Easter, try this cake, the latest in our series of delicious lavender recipes.
Ingredients
200g self-raising flour
200g unsalted butter
4 large eggs, beaten
1 tsp baking powder
2 tbsp milk
1 tsp vanilla extract
100g dark chocolate, melted
2tsp lavender syrup
2 tbsp cocoa powder
Two pinches of sea salt
Buttercream icing
100g dark chocolate, melted
250g butter, softened
400g icing sugar
5 tbsp cocoa powder
3 drops culinary lavender essence (adjust as described above)
1 tsp vanilla essence
3 tbsp double cream
Method
1. Preheat your oven to 190C (180C fan), gas mark 5
2. Combine all the cake ingredients in a food mixer and whizz until thoroughly mixed and smooth.
3. Line two round cake tins with greaseproof paper and divide the cake mix between them.
4. Bake in the oven for 20-25 minutes until a metal skewer comes out with no cake mix on it.
5. Cool on a wire rack.
6. Mix all the icing ingredients in a food mixer until smooth. Stick the two cakes together with some of the icing then cover the whole cake with the remaining icing. Why not decorate with a few mini Easter eggs and a sprig of lavender too?
