What could be more romantic than baking your valentine a cake? For the latest in our series of lavender recipes we’ve used rosewater and lavender for a delicately spiced cake that will show your true love how much you truly care
Ingredients
250g plain flour
2.5tsp baking powder
A pinch of salt
4 large eggs, beaten
200g caster sugar
125g unsalted butter, diced
125ml milk
2 tsp rosewater
2 tsp lavender syrup
2 tsp veg oil
2 tsp culinary grade lavender
For the icing
250g Icing sugar
2tsp rosewater
2tsp lavender syrup
4tbsp milk
Method
1. Pre-heat your oven to 180C/gas mark 4.
2. Put the flour, sugar, salt, baking powder, lavender and butter in a food mixer and whizz until combined.
3. Add the milk, rosewater, lavender syrup, eggs and vegetable oil and whizz until combined.
4. Pour into a greased, lined baking tin.
5. Bake for 20-25 minutes or until risen and golden.
6. Place on a wire rack to cool.
7. Combine all the icing ingredients, mix until smooth and pour onto the cake. Leave to set, then serve!
